pickled vegetables

Ingredients

Amounts are for one mason jar, if you want to make more, double the amount of each ingredients.

  • any vegetables you like (I used cucumbers, purple cauliflower, onions, radishes and carrots)

  • pickle spices (1/2 teaspoon for each jar)

  • 1 cup of white wine vinegar

  • 1 cup filtered water

  • 1 tablespoon of any non-iodized salt

  • 1 tablespoon sugar

Directions

  1. Boil water in a big casserole to sanitize your mason jars. When the water starts boiling, add your jars one by one in the hot water and leave it for 2-3 minutes. Take out and put on the side.

  2. Wash and cut up your vegetables and pack them into the sanitized jar.

  3. Add between ¼ - ½ teaspoon of the pickle spices in each jar.

  4. Combine vinegar, filtered water, sugar and salt in a medium saucepan and bring to a boil.

  5. Pour the pickling liquid over the vegetables in the jar.

  6. Wait until the jar cools down to put on the lid.

  7. Hide the jar in the back of the fridge for a few days. Enjoy!
